Ingredients
500 gms Carrot, peeled and grated
2 cups milk
1/2 cup sugar
2 tbsp ghee (clarified butter)
1/2 tsp cardamom powder, can replace with cardamom essence
10 raisins
Unsalted Nuts - 5 almonds, 5 cashews, 5 pistachios
How to make Gajar Halwa
Start with adding a 2 tbsp of ghee in a deep pan on a medium flame and once it is hot add grated carrots. Let the carrot cook for about 8-10 minutes or until its almost half its original size.
Add 2 cups of milk into the pan and bring it to boil and let it cook for about 15 minutes on medium to low flame and keep stirring after every 2 minutes.
Once the milk has completely evaporated, add sugar and cardamom powder and stir well. After you add sugar it will leave some moisture so let the water evaporate completely. Once the halwa has thickened and become aromatic, turn off the gas.
In a separate pan, add 1 tbsp of ghee and roast all the nuts and raisins for a minute. Garnish halwa with these nuts and Enjoy!
