This recipe for Mango Overnight Oats is a simple go-to whether you love mangoes or are looking for a breakfast option for hectic mornings.

Ingredients

  • 1/2 cups oats

  • 1 tsp chia seeds

  • 1 tbsp shredded coconut

  • 1/2 cup skim milk

  • 1 tsp mango extract, can replace with vanilla extract

  • 1/4 cup greek yogurt, mango flavor preferred if you do not have mango extract

  • 1/2 cup diced mango

  • 1 tbsp mixed nuts for topping

How to make Overnight mango oats

  • Add oats, chia seeds, and shredded coconut to a glass container. Stir to combine.

  • In a blender, blend skim milk, yogurt and mango/vanilla extract.

  • Pour half of wet mixture over the dry ingredients, then thoroughly mix.

  • Add a layer of chia seeds before adding other half of wet mixture. Place the container in the refrigerator overnight with the cover on.

  • Next morning, Serve with a layer of fresh diced mango and mixed nuts on top. Enjoy!
